Healthy Raw Guacamole

My ultra-favorite carby food has got to be sweet potatoes. And one of the several things I like to do with them is to turn them into fries! But even though eating plain fries is already good as it is, sometimes having them with a dip just makes it more fun!

Not that I go crazy for dips, but the appeal of raw, creamy guacamole is just something different from the rest. I actually want some right this second that I’m imagining it. Haha So here’s how to make a classic Mexican dip made-raw/vegan!


Prep time: 5 min
Total time: 10 min
Serving size: approx. 16 oz
1 ripe avocado
1 medium tomato, diced
juice of 1/2 lemon
cilantro, chopped
1 red baby onion or 1/2 of a regular onion, chopped
1 chili pepper, minced, and/or chili flakes (I like it spicy)
1 clove of garlic, minced
1/4 cucumber, diced
chopped pistachios and pumpkin seeds
sea salt and ground black pepper to taste
coconut milk (optional)
1.)   Half and pit the avocado and scoop it into a mixing bowl.
2.)   Using a fork, mash and add in lemon juice as you go.
3.)   Combine the rest of your ingredients and fold it altogether. Mix until everything is completely folded in.
4.)   Transfer the dip into another bowl or airtight container if storing.
