Spiced Pineapple Green Slush

It's already July in the Philippines (I can't believe it!) and the weather is still not getting any less hot when it should be. Not that I'm complaining -- I don't know if I'm ready to face the rain quite yet. Sunny days make me happy and they always give me a reason to make refreshing frozen treats such as this pineapple-based minty green slush. 

Pineapples can be such great friend when it comes to supporting a healthy digestive tract due to its high water and fiber content. They also contain Vitamin C which is great for an energy boost and battles wrinkles and dryness (yup!). The healing and anti-inflammatory properties found in this fruit help speed up physical recovery and reduce swelling and bruising in the skin. But as amazing as the amount of nutrition we can get from pineapples is their naturally sweet-sour and delicious taste which I just love. Saves me a few teaspoons of sweetener, too!

This one is my current favorite afternoon pick-me-up, as well as my mom's. I may have also received good feedback from a couple of folks from the Google+ community, so I hope you can give it a try and have yourself a happy tummy too! Here's how to make it.

Ingredients


1 ½ cup frozen pineapple chunks
1 cup frozen cucumber slices
1 cup coconut water
A small knob of ginger
A small handful of mint leaves
A handful of greens (optional)
Ice (optional)


Method

Grate the ginger and then combine it with the other ingredients in a blender. Process until smooth.
