Basic Vanilla Almond Chia Pudding

There's nothing like waking up in the morning with a delicious pot of goodness to look forward to for breakfast. Even in the most hectic of times, it's always such a ray of sunshine! As the semester gets busier, I only grow more dependent on make-head meals. Chia pudding, I find, is one convenient way to do it; it doesn't take time and is completely painless especially to those who don't cook! I also love how I have the luxury to be as creative as I can with the flavor and topping combination. 

Chia seeds may be slight in appearance but don't let the looks fool you because these little critters actually pack a serious nutritional punch. They're a neat energy-booster and are excellent in cleaning the digestive system as well as protecting the liver. They are fiber, protein, omega-3's, calcium and antioxidants all rolled into one functional item! Because of this, chia is meant to be taken (and enjoyed) in only small doses. We are all busy people, I know, but when you know you've got something as quick and beautiful as this chia pudding, you'll have no excuse to skip breakfast!

Prep time: 5 min (plus overnight)

Serves 1


1/4 cup chia seeds
1 cup almond milk
vanilla extract
agave (or any sweetener)
toppings of choice


  1. Stir together milk, chia seeds, vanilla and sweetener and then let sit for a minute or two. Stir the mixture again before popping in the refrigerator to set overnight.
  2. Take the pudding out of the fridge the next morning. The seeds should have transformed into soft, tapioca-like pearls. Top with your choice of fruits, syrup, nuts or cereal. Consume immediately.
